Place soy curls in a bowl. Pour the boiling water over curls. Let sit for at least 10 minutes.
Press as much water out of curls as possible. I tend to squeeze them a couple of times in my hands.
Heat up the cast iron skillet over medium heat. When the pan is hot, add the oil. When the oil is shimmering, add the soy curls.
Brown the soy curls, stirring ever once in a while, about 10 minutes.
Add the water and BBQ sauce to the pan. Mix well.
Brown the sauce-covered soy curls, stirring ever once in a while, about 15 minutes.
Remove the soy curls from the heat. Add celery.
Place the filling in a wrap and enjoy!
