We specialize in vegan and plant-based cooking. We love creating and cooking tasty and satisfying plant-based foods, showing that it is possible to have incredibly satisfying plant-based meals.

I love everything about food! I love learning the cuisines of the world and their history. I love learning about how different flavors and textures work together to make food both exciting and tasty. I love experimenting and finding new combinations of flavors and textures. Learning about food nutrition has helped me think about how food affects our health, and how to cook foods and combine ingredients that maximize nutrition. I like figuring out recipes that range from super easy to complicated. And finally, I like learning new cooking techniques. There is so much to learn when it comes to food. I especially like whole food, plant-based cooking because it provides a wide palette of subtle flavors and textures to dance with!
I have been making my own plant-based meat substitutes, like seitan, tofu, and tempeh. I constantly have some food fermenting on the counter or aging in the fridge. I have been making my own vegan cheeses for many years.
My journey to whole food, plant-based eating took a while. I grew up with a standard American diet with lots of meat and dairy. I started cooking in college and found I really enjoyed it. It helped me relax after a day of whatever. I went back and forth for years between being vegetarian and eating meat and dairy, going vegetarian for health reasons, and then back to eating meat and dairy, usually from social pressures.
I have now been whole food, plant-based since in 2013. I have always been concerned about the environment, bringing recyclables home from vacations in my suitcase if there was nowhere to put them where I was staying, and as I learned more about agriculture and its impact on climate change and the environment, I realized I couldn’t eat meat and dairy and claim to care about the environment. Also, my wife and I now have a small animal sanctuary called Doolittle Farm Rescue, those are some of our residents below, and I can’t bring myself to want to eat them any more.
Why Dancing With Plants, I hear you ask… For years I was a very avid social dancer, starting with square dancing and eventually doing competitive ballroom dancing, and many social dances, including Argentine Tango, and Lindy Hop. The name Dancing With Plants lets me combine two joys in my life.
