Smoked Tempeh Sandwich with Avocado

Each week begins with the question "What are we eating for lunch this week?" We tend to make one thing and eat it for the week so that lunch prep is simpler throughout the week, though it does require some upfront work to make enough for the week.

Last week I was in the mood for crispy, smoked tempeh sandwiches with avocado. It ended up being a big hit!

Ingredients

  • Tempeh
  • Coconut Aminos
  • Liquid Smoke
  • Avocado
  • Vegan Mayo
  • Garlic
  • Smoked Paprika
  • Aleppo Pepper

Tempeh is always amazing in a sandwich, and even better when it has a smokey flavor. The coconut aminos gives the tempeh a slightly sweet taste. The avocado provides a buttery contrast to the crispiness of the tempeh. And the mayo with the garlic and spices give a nice zing to the sandwich.

Instructions

Smoked Tempeh Sandwich with Avocado, slice the tempeh and place in a non-reactive container.

Slice the tempeh and place in a non reactive container. Make sure the tempeh is sliced thin so that the marinade gets all the way through the tempeh.

Mix the marinade.

Pour the marinade over the tempeh. Place in fridge. Let marinate for at least 3 hours, but is best overnight.

Put the mayo, garlic, and spices in a small bowl.

Yes, the garlic looks a little funny, but it is because it was fermented for a month,

Mix the sauce until well blended.

When the tempeh has marinaded long enough, drain the marinade. Pan-sear until crispy and browned.

Slice avocado, and assemble the sandwich.

Variations

As a spread, I took a jar of avocado mayo and added some Aleppo pepper and smoked paprika, hence the reddish color to the mayo. It would also be excellent with a good whole grained mustard. As I have said before, making the mustard yourself is super easy and so, so good. This is the recipe I use. But if you have a favorite store-bought brand, slather it on!

The sauce can also have other additions

  • Red pepper flakes
  • Urfa biber flakes
  • Jalapeños

The sandwich would also be really good with lettuce and tomato.

Ingredients
 
 

The tempeh

  • 8 ounces tempeh
  • ½ cup coconut aminos
  • ½ cup water
  • 1 tablespoon liquid smoke

The spread used in this sandwich

  • ½ cup mayonnaise vegan
  • 1 clove garlic finally diced
  • 1 teaspoon smoked paprika
  • 1 teaspoon Aleppo pepper optional, can also use urfa biber flakes

For the sandwich

  • 1 avocado

Instructions
 

  • Mix the coconut aminos, water, and liquid smoke. Mix well.
  • Slice the tempeh into thin slices (see Notes).
  • Pour the marinade over the tempeh. Marinade overnight, or at least for 3 hours.
  • Pour off the marinade.
  • Heat a cast iron skillet on medium. Add a small amount of oil. Wait until the oil shimmers. Add the tempeh. Shake the pan back and forth to keep the tempeh from sticking.
  • Fry until the tempeh is browned on one side, about 5 minutes. Flip and brown the other side.
  • Add the spread ingredients to the jar of mayo and mix.
  • Assemble the sandwich.

Notes

The above pictures were made with a fresh tempeh. If you can find it, use fresh tempeh, it is amazing. But if you can't, I have also made it with Light Life tempeh. When I made it with Light Life, I cut across its length  4 times, and then each slice was sliced in half keeping the slices the same shape. Slicing thicker tempeh would be easier, just slice thin.
The coconut aminos are nice as they have a slightly sweet flavor. Tamari can also be used, though will make the tempeh saltier.
 
Also, try the sandwich with lettuce and tomato!
